yogurt coffee cake.

Wow, hasn't it been a while since I've done a recipe?
No?
Oh well. Here's another one. And I just have a thing for easy stuff. Though I used to be bugged by having to make the sugar-cinnamon-chopped-nuts thing as an extra to top it off...now it's the perfect, much-needed finisher. And I know it.
Sucanat is the sweetener we've been using for the past few years, and now the only one, considering we found out a few unpleasant things about fructose we were getting in bulk from co-op... such as they've been deriving it from corn instead of fruit? Whatever. This stuff works good enough, and is somewhat like a less-moist version of brown sugar.
Just lovely. Cracking eggs, that is. I've tried and succeeded a few times, to crack them one-handedly like Audrey Hepburn in Sabrina, in the French school of cooking or something like that. It's obviously been a while since I've seen it.
Ha, we don't buy baking soda and powder in tiny containers...or cinnamon:) 
There ya go. A good bit of butter never made a cake bad. ;)
Ugh. It was with this picture that my desire grew: for a window above the stove. What horrid light, if you ask me. Electrics. Psh. (snort)
Good whole wheat flour...or whatever kind of flour you like to use...
Mmmmm. This is what happened when I put the correct amounts of butter, sucanat, vanilla, and eggs together:) But by far it isn't the best-tasting...not quite yet....
*very, very happy sigh*
This is where I had to hold myself back...snap my fingers at my side and take pictures and rush it to the hot oven.
Because it's just too good at this point.
Too good to resist. Well...almost.
There's the walnuts in sucanat and cinnamon. My goodness.
And yes, that's me, almost stepping out the back door, just to get a good picture with more-than-decent light. Too bad I mention that all the time, eh? Good light this, good light that. But most things are best seen, understood, and desired in good light. And I don't even know what I mean by that. But somehow it might make sense.
It goes from this, this wonderful glass pan of a home, to this:

And, since I'm not going to make you try to decipher my scrawls in the above picture, here's the recipe typed out:)

Yogurt Coffee Cake
1 cup butter, softened
2 cups brown sugar, packed
2 eggs
2 tsp vanilla
4 cups flour
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups yogurt

Now, obviously, you want two bowls: one for dry ingredients, one for wet ones, and a cup for the eggs. At least, that's what I crack eggs into. 
Starting from the top: 
In the bowl for dry stuff, cream butter and sugar together. 
Then add the eggs, and whisk in the vanilla.
Wonderful. You're doing very well.
Then, thoroughly mix the salt, & baking powder and soda into the flour in the bowl for dry stuff. 
Now dump 1/3 of that into the creamy mixture, and stir...
Now dump 1/3 of your yogurt into that, and stir. 
Do it again and again until it's all combined. It'll start to get nice and fluffy and oh so yummy.
Put that into a greased 9x13 pan and bake at 350 until it's done. Stick a fork in the middle and it should come out not too gooey.

BTW..I imagine you live in Boulder, CO in a century old frame house. Your music selections...the feeling of your posts...and your art..make me think that. :)
