pumpkin cookies. + salted caramel buttercream frosting. = something good.

the other day, leanna posted about blessed assurance and wonderful pumpkin cookies that will add a an extra pound to your thighs. and they taste good [obviously] and they melt in your mouth, and there's caramel involved . . .
so hey, of coursewe had to try that recipe out.

i ate five of them tonight.

50-100 push ups and 10 pull ups tomorrow . . . [i suck at pull ups.]

salted caramel buttercream
1/4 cup sugar
2 tbsp water
1/4 cup heavy cream
1 tsp vanilla
large pinch of salt
1 1/2 sticks salted butter, softened
2 cups powdered sugar

pumpkin cookies
yield: 5 dozen         
     1/2 cup sugar
     1/2 cup firmly packed brown sugar
     1 cup butter, softened
     1 cup canned pumpkin
     1 teaspoon vanilla extract
     1 egg
     2 cups all-purpose flour
     1 teaspoon baking powder
     1 teaspoon baking soda
     1/2 teaspoon cinnamon
     1/4 teaspoon pumpkin pie spice
     1/4 teaspoon salt
     3/4 cup finely chopped pecans
i tell you . . . i love chelsea's blog. and i just love how she writes about being a mom and wife.
so darn real and sweet and tough and all that. i want to be kinda like her when i grow up.
