ramblings and coconut pudding:)

Okay. It's a real problem when Just A Dream is running through your head. All afternoon, I might add.
We went to an Indian restaurant for lunch while we were out on errands...
But here it is chronologically; because Rach and I had fun snapping a few random pictures before we left. The sidewalk is a lovely place. ;)
That bottom left picture? My thermos that I'm excited about. I've been looking out for one for the past few weeks. Yeah. Obviously I haven't been in a gas station for that long. *snort* While we were on the long errands this morning, we stopped at a gas station and let me tell you, those were some of the best looking, cleanest bathrooms I've seen in any gas station. Ever.
But anyhow. I'm talking about thermoses here. This one was $2, and I filled it with coffee for free. They didn't have normal half-and-half, just flavored preservative creamers (sorry, that's yuck to me) so I took it black. It was pretty decent for gas station coffee. (wink-wink to heather)
Oh yes, and I'm almost 1/3 through Dream When You're Feeling Blue. And props to Heather (again) for that Audrey Hepburn shirt ...she got it for me at a Kohls near her because ours didn't have it. :P
Okay. And then here's the rest of the morning-to-early-afternoon:

Since my camera's batteries were left at home unknown to me, we used Rach's Canon for all these. Grammy cracked me up. In that pic of her with Mom, her hand waving the camera off, my caption would be, "Aw, what the heck. I've had enough of all this paparazzi!" 

Hmm. The main subject of this post is coconut pudding, right? Well, and rambles.
Ha.
But first of all, imagine this chair... 
Me, I think I'd rather have it in a different fabric, but hey, if I ever saw it in person, maybe I'd fall in love with it;)
Alrighty. Onto that lovely, simple recipe.
It was amazing last night.
So good. 
So I guess I'll stop dawdling and type the recipe for ya.
Simple Coconut Pudding
2 cups coconut milk
1 cup milk
6 TBSP sugar
5 TBSP cornstarch
1/4 tsp vanilla

Heat the milk on medium-low. Combine the dry ingredients. Mix into heated milk...Keep it heating on low till thickened. Serve hot or chilled. :) You can add chocolate chips to it, like Anna did to one batch, and do another of just plain coconut pudding . . . toast some coconut chips like Anna did, and arrange and serve however you want:)

oh no, too many delicious things in one post!! :P Yum to the coconut pudding. I love Indian buffets...I need to go to one soon but the closest one is an hour away!! :*( We make Indian food at home 1-2 times a week but eating something you didn't have to cook yourself is more fun! And they have so much to choose from during the buffet.
