slop. :)

Here's the recipe, dears. :)
[Okay, so I only lasted so long before I thought, hey, while that onion is sauteing, I can brew some coffee and share with Dad. :) Altura organic dark roast, mix a little bit of decaf flavored French Caramel Cream by Berres Brothers in, too.]

Slop / Chickpea Curry
1 onion, minced and sauteed in olive oil
Add:
1/2 bag of frozen spinach
4 small cans of diced tomatoes
1 can coconut milk
1 tsp curry powder
Last of all:
3 cans of garbanzo beans/chickpeas
salt
cayenne pepper, just a dash

Here's how much rice I cook for that much of the above:
4 cups rice
8 cups water
There is it! Oh, so good:) Hope y'all enjoy. It might be a little ...different... the first time, depending on how you are. But, after that, you totally get hooked. I promise. :) That's my story, anyways.

ok, well, I have made many a dish that looked like that! Never had coconut milk but everything else in it I love, so I would probably love this dish! The pics are awesome!

what a neat idea to do a collage of photos! I'm not a curry fan but that does look pretty good... I'll have to ask flyboy what his opinion of curry is...
