I mixed up some awesome apple pancakes (inspired by Jamie Oliver's recipe)...
3 large apples....peeled, cored, and put through the grater....
The recipe:) I love how Jamie's recipes aren't written out like normal recipes. Cut and dry. Instructions in a blunt, dragging way. It's from this book: Jamie's America.

I made a double batch of this.....single batch is good if our family only wants one per person. Heh. Leftovers are popular, too, so don't worry about it!
Whisk-whisk-whisk the eggs into submission.....I used sugar as the recipe said, but found out that with the apples in it, and the maple syrup most of us poured on top, it doesn't need much sugar at all in the batter.

Flour and baking powder mixed together in one bowl, pour the milk in the egg stuff first. Then dump the dry stuff in.
It's an old saying....
I probably should've added the cinnamon with the flour....we didn't remember till the last. Heh. They were still good, though...
So I shook some in. Good stuff.
Anna cooked them up while I read the paper.

When we came home on Sunday, all our snow was melted except for some icy patches. Nasty.
Last night.....we got a bit of fresh snow. At least it looks a little better......
A new 3-book series by Erynn Mangum that I didn't get around to reading in December....and now they have to go back, darnit. The CD cases above?? Iron and Wine, and Meaghan Smith.
.....And a "new" painting Mom listed on etsy. :) A lady immediately snatched it up for her treasury, a for-the-heck-of-it collection of things that, I guess, remind her of a morning in Britain with a cuppa and everything.
Flattering. :)
Personally, Anna and I loved the bloody hell coffee mug cozy that is also found in her treasury thingamajig. ;)
Oh! I nearly forgot to mention.....remember way back when?? When we hung a few of my canvases on the wall of a cute little restaurant in town because the lady was interested in local art???
Okay...well....the other day someone bought one. :)
Yep.
It was one of the small ones, but still. Someone bought one of my paintings! yay!!
I've been feeling kinda blah. Kinda like another Beka I know in the blogosphere today....
